Made from 100% Blackstrap Cane Molasses, the fermentation was in true Caribbean style with backset and Dundee pit fermentation to bring maximum flavour and esters into this double Potstill distilled 3 and half years old aged Dark Rum.
Aged on-site at Baoilleach Distillery for 3 years and 6 months. The cask was first charred and then smoked for several hours over a slow peat fire and then seasoned with Sherry. The Sherry influence is quite subtle due to the enormously flavoursome impact of the 100% blacktrap molasses Rum.
