Made from 100% Blackstrap Cane Molasses, the fermentation was in true Caribbean style with back-set and Dunder pit fermentation to bring maximum flavour and esters into this double Potstill distilled 3 and half years old aged Dark Rum. The spirit has now been vatting for over a year.
Aged on-site at Baoilleach Distillery for 3 years and 6 months. Aged in a Sherry Seasoned Virgin Oak cask 50L, Port Seasoned Virgin Oak Cask 50L, Sherry and Peat Smoke seasoned Virgin Oak Cask 50L and Heavy char Virgin Oak 50L Cask.
All 4 of these casks above have been bottled and sold, this is the Rum which was held back from those bottlings.
The Sherry, Port and Peat Smoke influences are quite subtle due to the enormously flavoursome impact of the 100% blacktrap molasses Rum.
