Acorn Series – Mash bill and Cask Exploration
To establish Whiskey Production at Baoilleach Distillery, I needed to explore the flavours possible. With the Small Pot – Big flavour motto in mind, it began.
Firstly, Single Malt, then Potstill, then 4 plate and then combinations of different peat levels, mash bills and fermentation styles. In total 7 casks were filled, of varying sizes and toast/char levels, Virgin Oak was the baseline from which to learn from each of the individual spirits.
The first Trio came from the second Single Malt Cask and the first Potstill Cask produced, the Potstill cask was split into two and finished in Port and Sherry casks. The Single malt finished in small Marsala casks. Batch 2 – Trio is a special bottling for Baoilleach Distillery – The Son – The oldest Spirit to date, The Father – The First 4 Grain Spirit, The Holy Smoke – The most heavily Peated.
Two Small Casks remain in the Exploration Series – Both 4 Plate, with mixed Mash bills and Peated.
THE SON - Single Malt - A hint of Peat
Aged in 50L Toasted Virgin European Oak Cask.
Bottled at Cask strengh, Natural Colour and Non Filtered.
Single Malt 55.6%
Distilled and Casked in Oct 2020, 3 Malt Barley types used with 15% Peated Malt in the mash bill - Cask Emptied in late October.
Baoilleach Distillery - 2 Year Old Single Malt, this is Baoilleach Distillery's oldest Spirit release to date.
THE FATHER - 4 Grain Potstill - A Slap of Peat
Aged in 50L Toasted Virgin European Oak Cask.
Bottled at Cask strengh, Natural Colour and Non Filtered.
4 Grain Potstill 53.3%
Distilled and Casked in Aug 2021, Oats, Rye, Raw Barley, 50% Peated Malt in the mash bill - Cask Emptied in late October.
THE HOLY SMOKE - Single Malt - In the Hands of the Gods
Aged in 50L Heavy Char Virgin European Oak Cask.
Bottled at Cask strengh, Natural Colour and Non Filtered.
Single Malt 52.5%
Distilled and Casked in July 2021, 3 Malt Barley types used with 100% Peated Malt in the mash bill - Cask Emptied in late October.
